Barley Soup (easy delicious recipe with almond milk)

Hi guys

I believe the best option for dinner during winter, is warm, delicious, healthy soup. Today’s recipe is simple yet full of nutrients.

Ingredients :

1- 1/2 cup organic barley

2- 2 tbs rolled oats (optional)

3- 1 cup unsweetened almond milk (or any other vegan milk)

4- 3 small carrots

5- a clove of garlic

6- 1/2 lemon

7- Salt & pepper

First throw 1/2 cup of barley in a dip pot. Then add salt and 1.5 liter water.


Put the pot on high heat until it starts boiling. Turn the heat down and put on the lead. cooking time depends on what kind of barley you are using. Since I’m using organic barley it takes 50 minutes. If you don’t know how long to wait, check the barley time to time, when it looks like the barleys in the picture, you can take next step.

Then add the rolled oats, almond milk, garlic and saffron.



Then grate the carrots and add them to the pot.


Now squeeze the half lemon and let it boil for 10-15 minutes.

It’s ready. If you like you can add a little bit of margarin when you’re serving the soup.

Quinoa and green bean


.one small bowl of frozen/fresh green beans

.one small onion

.2 big mushrooms (Portobello)

.1/2 cup quinoa

.one clove of garlic

.one can of chopped tomato

.bunch of parsley

.salt and pepper

.olive oil


  1. Pour warm water over frozen green beans and let them be for about 10 minutes. It will be easier to cut them in pieces after that. IMG_green beans
  2. Put a deep pot on high heat. Add one cup of water, quinoa and some salt. Let it boil for about 10-12 minutes.FullSizeRender copy
  3. Chop the onion. Put a pan on medium heat and add onions, one tbs of olive oil, salt and pepper.IMG_4891
  4. Cut mushrooms in chubby pieces and add them to onions. IMG_4888

  6. Cut green beans in small pieces and add them to the pan. IMG_4909
  7. After 4-5 minutes add chopped tomato. Let it boil for 4-5 minutes.IMG_4912

  9. At this point quinoa must be ready. Drain it and add it to other ingredient in the pan and stir. It is ready.FullSizeRender 4
