There is nothing more comforting for me than a bowl of delicious soup in a cold night. Today I am sharing with you one of my favorites which is really easy and you can prepare it in less than 40 minutes.
Here are the ingredients:
- one cup of lentil
- 1 small onion, chopped
- lime juice (as much as you like)
- 1 clove of garlic
- half cup of chopped fresh parsley
- 2 tomatos, chopped
- 4 cups of water
- salt and pepper
Rinse the lentils and put them in a pot on medium heat. Add chopped onion and garlic and water to it. let it boil for 20 minutes.
Chop the tomatoes and parsley.
instead of fresh tomato you can use canned chopped tomato, I just prefer fresh ingredients.
add the rest of ingredients to pot and let it boil slowly for 15 minutes. Avoid overcooking to preserve nutrients.
I like to add a little bit of saffron a few minutes before soup is done. But it is completely optional. I hope you try this recipe and enjoy it.
