Sweet rice with raisins

Hi guys

Last week I had some friends over for dinner. This is what I cooked. Since they really liked it, I thought you might enjoy it too.


1.Two cups of rice
2.Six small mushrooms
3.Two carrots
4.One red paprika
5.One orange paprika
6.Half cup of raisins
7.One tsp saffron
8.Olive oil
9.Five cups of cold water
10.Half cup of hot water
11.Salt and pepper


I use Jasmin rice, but any kind of rice works as well.

First put raisins in water and let it soak.

Then add hot water to saffron.

Now add rice, salt and one tbsp of olive oil to five cups of water and bring it to a boil. Let it boil for about 10 min. Meanwhile slice the mushrooms and paprikas.

Pick up a medium pot which has a lid (you’ll need that later), put it on oven. Fry mushrooms and paprikas in one tbsp of olive oil for 2-3 min then drain and rinse the raisins and add them to the pot and stir for another 1-2 min.


Now drain and rinse the rice and add it to rest of the ingredients.Then add the saffron och stir them.


Now put the lid on and wait until it starts to steam. Grate the carrots and add them to the steamy pot.


Let it be for 3-4 minutes and it’s ready.
